Caramelized onions taste delicious on everything from burgers to baked brie, so I wasn't surprised when pasta dishes featuring caramelized onions went viral on social media. Because what's not to love about cheesy, creamy spaghetti noodles mixed with sweet, caramelized onions and topped with nutty Parmesan cheese?

I love all pasta dishes equally, so when caramelized onion pasta started popping up all over Instagram and TikTok, I started saving recipes with the intention of making the viral dish for my family. But it was a recipe from Instagram influencer Chhaya Joshi of @cookwithchay that finally made me decide to go for the parmesan-topped version.

Joshi's Caramelized Onion and Chili Oil Pasta has garnered over 20 million views on social media. A fairly simple dish of spaghetti, caramelized onions, a cheese sauce with chili oil and fresh parsley. The pasta looked decadent and actually made my mouth water a little as I watched the video on loop.

In her now viral video, Joshi calls her pasta with caramelized onions and chili oil “an absolute bomb. I mean insanely delicious. It's spicy and creamy and you have to try it.”

How to make pasta with caramelized onions

Convinced, I headed to the grocery store to get the ingredients I didn't already have in my pantry. I cooked my 300 grams of spaghetti in boiling salted water and set about making the creamy garlic chili sauce while the pasta was cooking. First, I halved and thinly sliced ​​two large yellow onions, then caramelized them in butter and olive oil for about an hour until golden brown and soft.

Next, it was time to make the sauce. I cooked the chili oil, garlic, salt, and cream in a frying pan until it resembled a thick pasta sauce, then added the onions back in. When the sauce looked creamy and coated my wooden spoon a little, I used tongs to add my cooked spaghetti directly into the same pan and tossed it all together with grated parmesan cheese. Garnished with fresh parsley, the pasta dish was beautiful and I couldn't wait to get started.

My honest review of the pasta with caramelized onions and chili oil

As my family gathered around the dinner table, everyone greedily ate the pasta dish, even my teenagers who claim to “don't like onions.” The onions had become soft, melt-in-the-mouth threads that added a sweet flavor profile to the creamy, Alfredo-like pasta sauce. Combined with the mild heat of the chili oil, the dish had countless different flavor dimensions—it was sweet, slightly spicy, cheesy, and creamy all at the same time.

To get some extra protein, I served my pasta with caramelized onions and chili oil with some sauteed apple gouda chicken sausage. The sweetness of the onions in the pasta and the apples in the sausage made for the perfect fall bite, and the dish tasted even better leftover the next day after the flavors had had even more time to meld.

Joshi's viral pasta with caramelized onions and chili oil was incredibly easy to make, but looked beautiful and had the perfect sweetness and spiciness. Would I make this viral dish again? Absolutely. And I think my family would eat it again, too.

My daughter even claimed that the pasta dish tasted like French onion soup in noodle form, and my husband and I argued for the next few days about who got to eat the leftovers for lunch – it was that good.
